Liz's After Dinner Sweets with Chilli and Salt.

Ingredients

90g sunflower seeds

90g pumkin seeds

2 tbsp flaxseeds

4 tbsp Cacao powder( good quality with no suger added)

1 pinch of sea salt

1 pinch milled chilli flakes

1tsp vanilla essence

4 tbsp shredded coconut flakes

20 dried dates - no stones

1-2 tbsp water

50 gr chopped almonds

2 tbsp whole raisins or goji berries

1 pinch of sea salt - to sprinkle on the top.

Method

  1. Put all the seeds in a food processor and blend until they become a rough ‘flour’ mix.

  2. Add cacao powder, a pinch of salt, chilli, vanilla essence and coconut flakes in to the mixer bowl. Shortly blitz all the ingredients.

  3. Add the dates to the mixing bowl and blitz all of the ingredients so that it becomes a sticky dough. Add the water and mix again.

  4. Add the raisins or goji berries and the chopped almonds and hand mix -not in the mixer.

  5. Use a tray that is about 20X30 cm. Line the tray with silicon coated baking paper.

  6. Take your sticky mixture and spread it evenly out into the tray. Sprinkle some sea salt flakes on the top. Press it down.

  7. Take another sheet of baking paper and put it on top the mixture. Using a rolling pin or an empty bottle, roll the mixture until it is compact and even in the tray. The mixture should be rolled out so that it’s about 1 cm thick.

  8. Put the tray with the flattened mixture into the freezer four at least an hour.

  9. Take out and cut into 3x3 cm squares .

  10. Store in the fridge.
